Add the Cap'n Crunch cereal to a zip-top bag and crush it with a rolling pin until it resembles coarse crumbs. Pour the crushed cereal into a shallow bowl.
In a separate bowl, whisk together the eggs, heavy cream, vanilla extract, granulated sugar, and cinnamon until smooth and fully combined.
Set up a dipping station with the custard mixture in one bowl and the crushed cereal in another.
Dip each slice of Texas toast into the egg mixture, coating both sides. Allow any excess mixture to drip off.
Press the soaked bread into the crushed Cap'n Crunch cereal, coating both sides evenly.
Heat 2 tablespoons of butter in a large skillet over medium heat. Add the coated bread slices and cook until golden brown and crispy on the bottom, about 3 to 4 minutes.
