Ingredients

  • ½ cup unsalted butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • ¼ cup cornstarch
  • ½ cup dark cocoa powder
  • ½ teaspoon salt
  • 1 ⅓ cup flour
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 ounces cream cheese

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper. In a large bowl, beat the butter and sugar together until light and fluffy.

  2. Add the vanilla extract and egg, mixing until fully combined. Add the cornstarch, cocoa powder, and salt, then mix on low speed until blended.

  3. Gradually mix in the flour until a soft dough forms that is no longer sticky. Gather the dough into a ball.

  4. Roll the dough between two sheets of parchment paper to about ¼-inch thickness. Remove the top parchment layer and cut out 2-inch circles.

  5. Place the cookies on the prepared baking sheet and bake for 10–12 minutes, until the edges are set. Let cool completely before filling.

  6. In a bowl, beat the powdered sugar, vanilla extract, and cream cheese until smooth and thick.

  7. Pipe the filling onto half of the cookies. Top with the remaining cookies to form sandwiches.
