Ingredients

  • 2 pounds ground beef
  • 2 10 oz cans Rotel diced tomatoes with green chilis
  • 32 ounces beef broth
  • 3 tablespoons taco seasoning no sugar or homemade recipe
  • ½ teaspoon garlic powder
  • ½ cup diced onion
  • ¼ teaspoon ground pepper
  • 8 ounce package of cream cheese cubed and very soft
  • 2 cups shredded cheddar cheese
  • Optional garnishes: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink, about 7 to 8 minutes. Drain off any excess grease.

  2. Spoon the cooked beef into your crockpot. Add the Rotel, beef broth, taco seasoning, diced onion, garlic powder, and pepper. Mix everything together.

  3. Cover and cook on low for 4 hours or on high for 2 hours until the soup is hot and flavorful.

  4. Add the softened cream cheese and shredded cheddar. Stir well until both cheeses melt smoothly into the soup.

  5. Top with your favorite garnishes and enjoy warm.
