Ingredients

  • 1 cup unsalted butter
  • ½ cup sugar
  • 1 cup chocolate chips
  • 1 cup chopped toasted almonds, divided

Instructions

  1. Line an 8x8 or 9x9 square pan with parchment paper.

  2. Sprinkle ½ cup of the chopped almonds evenly across the bottom. Set aside.

  3. In a small heavy bottomed saucepan, combine butter and sugar.

  4. Heat over low, stirring until the butter has melted and the sugar has dissolved.

  5. Once the mixture begins to bubble, insert a candy thermometer.

  6. Stir very frequently until the mixture reaches 300°F (hard crack stage).

  7. Remove from heat but keep stirring the mixture.

  8. Carefully pour the toffee mixture into the prepared pan on top of the almonds. Let sit for 5 minutes.

  9. In a microwave safe bowl in 30 second intervals melt your chocolate chips.

  10. Spread the chocolate over the toffee. Top with the remaining almonds.

  11. Refrigerate for at least 2 hours or until set. Slice into pieces and serve!

Recipe Notes

• Toast the almonds for extra flavor.
• Let the toffee rest before spreading on the chocolate so it doesn’t melt too fast.
• Break into rustic pieces for a fun, homemade look.
• Perfect for holiday gifting or dessert trays.
• Freezes beautifully for long-term storage.
