Ingredients

  • 2 pounds red potatoes cubed
  • ¼ cup sour cream
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 6 strips cooked bacon chopped
  • 1 red onion diced
  • 1 cup cheddar cheese
  • ¼ cup chopped dill pickles
  • 1 teaspon salt and pepper
  • ¼ cup chopped parsley
  • ¼ cup green onions

Instructions

  1. Add the cubed potatoes to a pot and cover with cold water. Bring to a boil and cook until fork-tender, then drain and let cool completely.

  2. In a bowl, whisk together the sour cream, mayonnaise, Dijon mustard, and apple cider vinegar until smooth.

  3. Add the cooled potatoes to a large bowl along with the bacon, onion, cheese, pickles, salt, and pepper.

  4. Pour the dressing over the top and gently mix until everything is evenly coated.

  5. Stir in the parsley, cover, and chill in the fridge for at least 1 hour before serving.
