Easy Simple Greek Pasta Salad Recipe

Ingredients

  • 10 ounces short pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • ½ small red onion, thinly sliced
  • ½ cup kalamata olives
  • ¾ cup feta cheese, crumbled
  • cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta in salted water according to the package directions until tender. Drain and rinse with cool water, then let it cool completely.

  2. Add the cooled pasta to a large mixing bowl along with the cherry tomatoes, cucumber, red onion, olives, and crumbled feta cheese.

  3. In a small bowl or measuring cup, whisk together the olive oil, red wine vinegar, salt, and black pepper until combined.

  4. Pour the dressing over the pasta salad and toss gently until everything is evenly coated.
