Ingredients

  • 2 pounds London broil (top round or flank steak)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 cup Dr Pepper (not diet)
  • ½ cup beef broth
  • ¼ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the London broil with salt and pepper and place it in the slow cooker.

  2. Add the sliced onion and minced garlic on top.

  3. Whisk together Dr Pepper, beef broth, ketchup, brown sugar, Worcestershire sauce, soy sauce, onion powder, and smoked paprika. Pour over the beef.

  4. Cover and cook on Low for 8 hours or High for 4 hours.

  5. Remove the beef and tent with foil. Mix cornstarch with cold water and stir into the sauce. Cook on High for 10–15 minutes until thickened.

  6. Slice beef against the grain, return to the gravy, and garnish with parsley before serving.
