This slow cooker London broil with gravy is tender, flavorful, and made with a simple Dr Pepper sauce that cooks low and slow into a rich, comforting gravy. It’s an easy crockpot dinner that’s perfect for busy days, cozy nights, and serving over mashed potatoes or noodles with minimal prep.
Season the London broil with salt and pepper and place it in the slow cooker.
Add the sliced onion and minced garlic on top.
Whisk together Dr Pepper, beef broth, ketchup, brown sugar, Worcestershire sauce, soy sauce, onion powder, and smoked paprika. Pour over the beef.
Cover and cook on Low for 8 hours or High for 4 hours.
Remove the beef and tent with foil. Mix cornstarch with cold water and stir into the sauce. Cook on High for 10–15 minutes until thickened.
Slice beef against the grain, return to the gravy, and garnish with parsley before serving.
