Easy S’more Brownie Bites

These S’more Brownie Bites are the perfect mini treat with all the flavors of classic campfire s’mores. Each bite has a graham cracker base, a fudgy brownie center, toasted marshmallows, and melty chocolate on top. They’re easy, cute, and great for parties, holidays, or anytime you're craving a fun, cozy dessert.

Ingredients

  • 2 sticks unsalted butter
  • 1 ½ cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup crushed graham crackers
  • 1 cup mini marshmallows
  • 1 chocolate bar, chopped into large pieces

Instructions

  1. Preheat the oven to 350°F and spray a mini muffin pan with nonstick cooking spray.

  2. In a medium skillet, melt the butter and sugar together over medium heat, whisking until smooth and glossy.

  3. Whisk in the cocoa powder and vanilla extract, then remove from heat and transfer to a large mixing bowl. Let cool for about 10 minutes.4. Once cooled, whisk in the eggs until fully combined.

  4. Gently fold in the flour and salt until just mixed-do not overmix.

  5. Add a thin layer of crushed graham cracker crumbs to the bottom of each muffin cup.

  6. Spoon brownie batter over the graham layer, filling each cup almost to the top.

  7. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean.

  8. While still warm, use the back of a spoon or a small round tool to make an indent in the center of each brownie.

  9. Top each with a few mini marshmallows and place under the broiler for 30 seconds to 1 minute, watching closely until toasted and golden.

  10. Immediately press a piece of chocolate and a sprinkle of crushed graham cracker into the warm marshmallow.

  11. Let cool in the pan for 5 minutes before transferring to a wire rack.
