These loaded BBQ chicken sliders with bacon and ranch are cheesy, smoky, and packed with flavor in every bite. Made with juicy barbecue chicken, crispy bacon, melty cheese, and soft Hawaiian rolls, they’re perfect for parties, potlucks, game day, or an easy weeknight dinner.

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts
  • 2 cups barbecue sauce (divided)
  • 1 12 pack of Hawaiian rolls
  • ¼ cup mayonnaise
  • 6 slices of Colby jack cheese
  • 8 slices of cooked bacon
  • Half a red onion (sliced)
  • 2 cups shredded lettuce
  • ¼ cup ranch dressing

Instructions

  1. Slice the chicken breasts into smaller 4-inch pieces and place them into a large zip-top bag. Pour in 1 ½ cups of barbecue sauce and shake until all the chicken is fully coated.

  2. Heat a large skillet over medium heat and add a little oil to prevent sticking. Cook the chicken for 5 to 7 minutes per side until fully cooked with lightly charred edges.

  3. Transfer the cooked chicken to a cutting board and chop or shred it into bite-sized pieces. Set aside.

  4. Slice the Hawaiian rolls horizontally and place the bottom half onto a tray or baking sheet. Spread the mayonnaise evenly across the bottom buns.

  5. Add the shredded BBQ chicken over the rolls, then drizzle the remaining ½ cup of barbecue sauce on top.

  6. Layer the cheese slices, cooked bacon, sliced red onion, and shredded lettuce over the chicken. Drizzle ranch dressing across the top.

  7. Place the top buns over the sliders, slice into individual portions, and serve immediately while warm and cheesy.
