Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 1 can white beans, drained and rinsed
  • 1 can sweet corn, drained
  • 1 can mild diced green chilies
  • 1 small onion, diced
  • 3 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon dried oregano
  • Salt and pepper
  • 4 ounces cream cheese
  • ½ cup heavy cream or milk

Instructions

  1. Place chicken, beans, corn, green chilies, onion, broth, and seasonings into the slow cooker.

  2. Cook on low for six to seven hours or on high for three to four hours until chicken is tender.

  3. Remove chicken, shred with two forks, and return it to the pot.

  4. Stir in cubed cream cheese and heavy cream or milk. Cover for ten to fifteen minutes, then stir until smooth.

  5. Adjust seasonings and serve warm.
