
These easy chicken taco pinwheels are creamy, cheesy, and packed with Southwest flavor in every bite. Made with chicken, taco seasoning, cheddar cheese, and soft tortilla rolls, they’re the perfect make-ahead party snack for game day, potlucks, lunchboxes, or casual hangouts.
In a large mixing bowl, combine the cream cheese, sour cream, chicken, cheddar cheese, green onions, bell peppers, cilantro, and taco seasoning. Mix with a hand mixer until smooth and fully combined.
Lay one tortilla flat and spread about one-quarter of the chicken mixture evenly across the tortilla, leaving a small border around the edges.
Roll the tortilla tightly into a log shape. Repeat the process with the remaining tortillas and filling.
Place the tortilla rolls into the refrigerator and chill for about 1 hour so they can firm up before slicing.
Use a sharp knife to slice each tortilla roll into 1 to 1 ½ inch pinwheels. Arrange onto a serving tray and serve chilled.
