
These Pumpkin Overnight Oats are creamy, cozy, and packed with pumpkin spice flavor. Made with protein powder, pumpkin puree, and old fashioned oats, they're an easy make-ahead breakfast that's perfect for busy fall mornings and meal prep.
In a medium mixing bowl, stir together the old fashioned oats, vanilla protein powder, and pumpkin pie spice until evenly combined.
Add the pumpkin puree, milk, and maple syrup. Mix well until all of the ingredients are fully incorporated and no dry spots remain.
Divide the mixture evenly between two jars or airtight containers. Cover with lids and refrigerate overnight, or for at least 6 to 8 hours.
Before serving, stir the oats. If you'd like a thinner consistency, mix in a splash of milk.
