Easy Pumpkin Spice Truffles (No Bake)

Ingredients

  • 4 ounces cream cheese
  • 2 tablespoons powdered sugar
  • cup pumpkin puree (not pie filling)
  • 2 cups graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 24 ounces vanilla almond bark or melted white chocolate

Instructions

  1. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.

  2. Set aside about ¼ cup of the graham cracker crumbs for decorating later. Add the pumpkin puree, remaining graham cracker crumbs, pumpkin pie spice, and cinnamon to the cream cheese mixture. Stir until everything is evenly combined.

  3. Cover the bowl and refrigerate the mixture for at least 2 hours so it's firm enough to roll.

  4. Line a large baking sheet or tray with parchment paper. Scoop the chilled mixture and roll it into 1-inch balls, placing each one on the prepared baking sheet.

  5. Add the vanilla almond bark to a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until completely smooth.

  6. Using a fork or dipping tool, coat each pumpkin truffle in the melted almond bark. Let the excess coating drip back into the bowl before placing the truffle on the parchment-lined baking sheet.

  7. Immediately sprinkle the tops with the reserved graham cracker crumbs before the coating begins to set.

  8. Let the truffles sit for about 1 hour, or until the coating is completely firm. Serve immediately or refrigerate until ready to enjoy.

  • Vanilla almond bark melts smoother, making it the easiest option for dipping.
  • White chocolate also works well if you prefer. It's usually less expensive and easier to find, but it tends to be a little thicker when melted.
