Ingredients

  • 2 pounds ground beef
  • 1 small yellow onion
  • 1 large bell pepper, seeded and diced
  • 14 ounce can green chilis
  • 5 cloves garlic, minced
  • 15 ounce can diced tomatoes
  • 14.5 ounce can tomato sauce
  • 1 ½ tablespoons chili powder
  • ¼ teaspoon cayenne pepper
  • ¾ teaspoon dried oregano
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ¼-1/2 teaspoon black pepper
  • 1 teaspoon fine sea salt
  • 2 dried bay leaves (optional)
  • Garnishes like shredded cheddar cheese sour cream, and sliced green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess grease.

  2. Transfer the cooked meat to the slow cooker and add the onion, bell pepper, green chilis, garlic, diced tomatoes, tomato sauce, and all seasonings. Stir well.

  3. Cover and cook on High for 4 hours or Low for 6–8 hours, until thick and flavorful.

  4. Remove bay leaves if used, then serve hot with desired toppings.
