Ingredients

  • 1 pound canned corn or frozen corn (defrosted)
  • 2 tablespoons unsalted butter
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 teaspoon chili powder
  • salt to taste

For topping

  • ½ cup Cotija cheese
  • Extra chili powder
  • Chopped cilantro
  • Lime wedges or wheels

Instructions

  1. Place a skillet over medium heat and add the butter. Let it melt completely, then increase the heat slightly to prepare for cooking the corn.

  2. Add the corn to the skillet and cook, stirring occasionally, until heated through and lightly charred in spots. Reduce heat if needed to prevent burning.

  3. Remove the skillet from the heat. Stir in the mayonnaise, sour cream, chili powder, and salt until the corn is evenly coated and creamy.

  4. Spoon the corn mixture evenly into serving cups.

  5. Top each cup with cotija cheese, a sprinkle of chili powder, chopped cilantro if desired, and a squeeze of fresh lime.
