Once fall hits, we get the majority of our vegetables from roasted vegetable dishes, hearty stews, soups, and in the crock pot. This is my first year attempting a fall/winter garden and plan on cooking more with healthy greens like kale, Swiss chard, spinach and cabbage. When you load your salads up with goodies, even the kids will find something in their they enjoy.
