4. Strawberry Ice Cream Cake
My strawberry ice cream cake recipe is perfect for a birthday or bridal shower. You can make multiple layers here or just a single layer (like I did below).

- 18-20 sheets graham crackers (plain or cinnamon)
- 1 quart vanilla or strawberry ice cream, slightly softened
- 1 (8 oz) tub whipped topping (like Cool Whip) or make whipped cream
- 1 (12 oz) jar strawberry jam
- 1 cup sliced fresh strawberries
- Line a 8 or 9-inch square pan with parchment paper.
- Add a layer of graham crackers to the bottom of the pan, breaking as needed to fit.
- Spread half of the softened ice cream over the crackers.
- Spread a layer of whipped topping, then swirl in half of the strawberry jam.
- Add another layer of graham crackers and repeat with remaining ice cream and whipped topping. Swirl in the remaining jam, reserving about 2 tablespoons for topping.
- Add a final layer of graham crackers. Cover and freeze for at least 4 hours, or until firm.
- Lift from the pan using parchment and let sit for 5 minutes before slicing.
- Spread additional whipped topping over the top, swirl with reserved jam, and top with sliced strawberries. Serve immediately.
5. Lazy Girl Strawberry Cake (3 Ingredients)
This is similar to the viral Japanese cheesecake texture once chilled, but easier to make and more like a creamy no bake dessert.

- Graham crackers
- 2 cups whipped cream
- 2 cups sliced strawberries
- Spread a thin layer of whipped cream in the bottom of an 8x8 dish.
- Add a layer of graham crackers, breaking them as needed to fit.
- Spread whipped cream over the crackers, then add a layer of sliced strawberries.
- Repeat layers until ingredients are used, ending with whipped cream on top.
- Cover and chill overnight until the graham crackers soften.
6. Pink Strawberry Fluff

- 1 (20 oz) can crushed pineapple, very well drained
- 1 (3 oz) packet strawberry gelatin
- 1 ½ lbs fresh strawberries, diced
