Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 yellow onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14.5 ounce) can diced tomatoes, drained
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons capers
  • Salt and pepper, to taste
  • Fresh parsley and basil for garnish

Instructions

  1. Warm the olive oil in a skillet over medium high heat. Season the chicken with salt and pepper and sear for 2 to 3 minutes on each side until lightly golden.

  2. Add the onion, peppers, mushrooms, and garlic to the bottom of the slow cooker. Place the seared chicken on top.
