I make this Slow Cooker Chicken Bacon Ranch Potato Soup whenever I want something cozy, creamy, and zero-effort I can live off of all week long. This easy Crock Pot potato soup recipe is given a twist with chicken bacon ranch flavors and it's made super easy by starting with frozen hash browns!

I also have an easy Crock Pot loaded baked potato soup if you want classic flavors.

I'm obsessed with anything "crack chicken" flavored (a common nickname for anything chicken bacon Ranch), so turning it into a potato soup was an instant yes for me. I love a recipe that basically cooks itself while I live my life.

You'll love this one because it's creamy, cheesy, ranchy, super easy to customize, and perfect for nights when you want maximum comfort with minimal cleanup.

Things to Know Before Making Slow Cooker Crack Potato Soup

  • Frozen diced hash browns make this recipe insanely easy and cook perfectly tender.
  • You can swap cream cheese brands, just make sure it's softened so it melts smoothly.
  • Add the dairy at the end so the texture stays silky and never curdles.
  • Garnish is the aesthetic moment: crispy bacon, melty cheese, and bright green onions.

How to Make Slow Cooker Potato Soup

Step 1: Add the frozen hash brown potatoes, diced onion, minced garlic, half of the cooked bacon, and the dry ranch seasoning mix to the slow cooker. Gently stir so the potatoes are coated in the garlic and seasoning. This helps every bite get that classic "crack" flavor.

Step 2: Pour in the chicken broth and cream of chicken soup. Stir everything together until the potatoes are coated in the broth and soup mixture, then sprinkle in the salt, pepper, garlic powder, onion powder, and smoked paprika.

Step 3: Cover the slow cooker and cook on Low for 6 hours or on High for 3 hours, until the potatoes are very tender and the soup is hot and bubbling around the edges. Give it a quick stir halfway through if you are home, just to keep everything cooking evenly.

Step 4: Stir in the sour cream, softened cream cheese cubes, and 1 cup of the shredded cheddar cheese. Cover and cook for another 15-20 minutes, stirring occasionally, until the cheeses are fully melted and the soup is smooth, creamy, and thickened.

Step 5: Ladle the crack potato soup into bowls and top with the remaining shredded cheddar, the rest of the crispy bacon, and a sprinkle of chopped green onions.

Substitutions and Variations

  • Swap cream of chicken for cream of bacon or cream of celery.
  • Try Pepper Jack or Colby Jack for a different cheesy vibe.
  • Use turkey bacon or pancetta instead of traditional bacon.
  • Make it vegetarian by using veggie broth and skipping the bacon.

What to Serve with Potato Soup

Serve this soup with a cozy lineup like garlic bread, a simple green salad, or buttery dinner rolls.

Storage and Freezing

Store leftovers in an airtight container for up to 3 days. Reheat on the stove or in the microwave with a splash of broth or milk to thin it back out. Avoid freezing because dairy-based soups can separate.

FAQs

Can I use shredded hash browns instead of diced?

Yes. Shredded hash browns work too but will create a smoother, slightly thicker soup.

Why is my potato soup too thick?

It thickens as it cools. Add a splash of broth or milk to adjust the consistency.

Can I use low-fat cream cheese?

You can, but full-fat cream cheese melts smoother and makes the soup extra creamy.

What makes it "crack" soup?

The combo of ranch seasoning, bacon, cheddar, and creamy base gives it that popular "crack chicken" flavor that everyone loves.
